5:00 I used baking powder but never again. Remember it is a type of salt. My wings come out far too salty. If your dipping sauce already has salt in it then I recommend forgoing/limiting salt/soy sauce in your rubbing or marinade.

You mix the flour and corn starch in a 3 parts flour to 1 part corn starch, you get the best of both worlds.
So are you using baking soda or baking powder, or are these the same thing? (since you corrected baking soda with baking powder at one point) I've been looking for new recipes with baking soda.

I think you went a bit heavy on the baking powder on the first batch. I use 2 tsp for 2 pounds of wings. 1 1/2 tsp for six wings may have been a bit much.

My favorite technique is to take them out the night before, salt them, and leave them on a baking sheet in the refrigerator overnight. (Salt curing?) I've got an air fryer. Definitely going to try the twice baked. Enjoyed that video. Thanks

It’s too much of an error to use baking soda in your chart. Also, using “raw” to describe wings without sauce could be confusing. Love the wings but not ready for prime time. Hope your family is doing well.

You should also try potato starch and tapioca starch I've heard they both have significant differences

If you part boil or boil entirely you have to reduce the frying time afterwards cause you're not trying to cook them up again, you're just trying to crisp them
What do you use for your oil sprayer? Is it refillable? Sounded strange when you used it.
