well you don't make "powered dried shrimp" here, It's a waste of potential tbh. You should also stirring some roasted peanuts along with ingredients to enhance the flavors while extra peanuts as a topping is completely optional. Other than that I think you're doing good because you're better cook than me.

How spicy is this version? Doesn't sound like it would be very spicy. I like my Pad Thai to have a pretty decent kick of spice to it. Nothing crazy like "thai spicy" or "chef spicy" that you see at some places but I'll usually kick the spice level up a notch or two from the default value at the restaurant.

It looks fantastic Joshua! Don't listen to anybody said it's not authentic. I am Thai living abroad, sometimes it's hard to find the exact ingredients. The end of the day if it's delicious and you're happy, that's the goal.

Hey Josh, I have been watching your videos every time you post something and I really admire your kitchen and how clean it looks. I have been baking alot of bread in my oven, following your tips and tricks, however this morning my oven broke down. I do not know if its because of the high heat for long amounts of time, so I was wondering what brand and model your oven is as I want a nice oven now that I am already spending.
