Yours look great. I love drop biscuits in my air fryer. They get crunchy on top too. I also love adding the seasoning “everything bagel” to my batter and I’ll sprinkle a little on top prior to cooking.
Even though the measuring cup is a Pyrex, hopefully, the cook allowed time for the oil to cool off. Downshock (sudden immersion in cold water) could cause the cup to shatter. Not just any flour will do. Your classic 'Southern' biscuit is made with a winter flour (Lily White), which is lower in protein and makes for a tender, light, fluffy biscuit.. Add in that she's over-mixing the batter and I wonder how these will turn out. Using Crisco or butter is better because it has more flavor, and the dairy in the butter will caramelize as it bakes, rendering a beautiful golden color, and delicious taste. Just straight up bacon grease is overwhelming to a biscuits delicate flavor profile. I think I'll pass.

Dice the bacon and add to the batter with shredded cheddar and flatten the biscuits more and serve with a poached egg on top. jmo
